MILWAUKEE (CBS 58) -- The Dairy Farmers of Wisconsin joined us Tuesday, Nov. 21, showcasing two autumn-themed recipes, highlighting the versatility and richness of locally produced cheese.
Angie Edge, representing the Dairy Farmers, demonstrated the preparation of Harvest Roasted Squash-Kale Salad and Gran Cru Surchoix Cheese Crostini, with a focus on fresh, locally sourced ingredients.
The Harvest Roasted Squash-Kale Salad aims to combine the flavors of delicata squash, kale, green onions, pecans, dried cranberries, golden raisins and the locally produced Deer Creek The Night Walker cheese.
The Gran Cru Surchoix Cheese Crostini features a combination of fresh pears, apple cider vinegar, golden raisins, dried cranberries, dark molasses and minced fresh thyme, creating a complex taste profile.
The toast is topped with a mixture of these ingredients along with slices of the cheese, finished with chopped pistachios and fresh thyme for added texture and flavor. This recipe showcases the award-winning Wisconsin cheese, known for its deep, sophisticated flavors.
