More than 80 new foods coming to Wisconsin State Fair for 175th anniversary

WEST ALLIS, Wis. (CBS 58) -- National State Fair Food Day is Saturday, July 11, and this year's Wisconsin State Fair is marking the occasion with an early peek at the more than 80 new food and beverage offerings coming to the 2026 fair, including the Bloody Mary Mac Daddy, Chimi-Brat-Changa and Smoked Pork Pierogi Sliders.

Ellsworth Cooperative Creamery's cheese curds have been named the official cheese curds of the State Fair. For the first time, Ellsworth is offering pre-packaged 2-ounce pouches in five flavors at Brad & Harry's concession stand, in addition to its usual battered and fried curds sold throughout the grounds.

Other new items include the Wisco Short Rib Corn Dog, a braised short rib and gouda skewer battered in beer cornbread mix, and the Bugged Out Frozen Cheesecake On-a-Stick, a chocolate-dipped dessert topped with candy crickets and worms. Also new are Deep-Fried Ranch, a breaded and fried ranch filling served with hot honey, and Nitro Cheesy Puffs, cheese puffs frozen with liquid nitrogen.

Drink options include the Color-Changing Swamp Juice, a blue raspberry lemonade that changes color when mixed, and the Cosmic Funnel Cake, topped with purple icing and freeze-dried candy. Also, while circus peanuts are a famously polarizing sweet treat, the Circus Peanut Spritz is said to recreate the flavor of circus peanut candy with banana bread syrup and club soda, topped with whipped cream and a piece of the candy.
