Slo' Motion BBQ: Waukesha Co. man's slo' journey to perfecting smoked BBQ
WEST ALLIS, Wis. (CBS 58) -- Slo' Motion BBQ is expanding. Adam Gegare is the owner of the catering and event food truck. After five years of taking his smoker on the road, he now has a retail and take-out spot in Sussex.
"I literally jumped all in," said Gegare of his 2019 leap of faith. He quit his state job to start his own business.
It wasn't a life-long passion for cooking BBQ that led him to Slo' Motion BBQ. Instead, it was the heat that couldn't keep him out of the kitchen.
"I really enjoy fire, so managing the fire and making sure it's proper is a big thing for me," said Gegare.
After buying his first smoker, it was love at first cut.
"It's fun and food brings people together," said Gegare. "It's the craft, it's the challenge, it's learning how to run your pits properly to get a good clean smoke, which equates to a better flavor on the meat."
Over the years he's catered over 100 weddings. And he's perfected the brisket, the ribs and the homemade sides.
"My number one seller is my brisket. All of my sides are scratch made," said Gegare.
He credits partnerships with other local businesses for helping him get his wheels rolling. He started out working out of Mama Bev's kitchen in 2019. Now, he's still serving up Mama Bev's butter cakes with his meats. He says the sweet and tangy are the perfect complement for each other.
At the Sussex location, N64W22648 Main St., you can get your hands on one of Slo' Motion's Wisconsin-made BBQ sauces too-- like the popular I-94.
This weekend, you can find Slo' Motion BBQ at Spanky's in Waterford for their last public event of the year.
