Wisconsin's state fruit sweetens the State Fair with the debut of a new dish
WEST ALLIS, Wis. (CBS 58) -- A new dish has entered the lineup for the 2023 Wisconsin State Fair featuring a tangy twist on a traditional favorite paired with a Wisconsin staple fruit.
The Wisconsin State Cranberry Growers Association has introduced the Cranberry Éclair, a product of their collaboration with O&H Danish Bakery. The dessert, a blend of traditional Éclair choux pastry, custard, tart Wisconsin cranberry filling and fudge frosting, will be available at the WSCGA booth in the fair's Wisconsin Products Pavilion.
2023's Wisconsin State Fair, taking place from Aug. 3 - 13, will see the debut of this sweet and tangy dish.
"We're thrilled to be partnering with O&H Danish Bakery to bring a brand-new food item to our menu," said Tom Lochner, executive director of WSCA. The Cranberry Éclair, he added, is an innovative way to showcase Wisconsin's state fruit.
Apart from the new entrant, other cranberry-based products, such as Cranberry White Chocolate Chunk Cookies and cranberry juice, will also be featured at the fair. WSCGA's booth will display videos about cranberry cultivation, offer samples and provide an interactive cranberry marsh exhibit.
"Ruby," the cranberry mascot, will be present from 2 - 5 p.m. daily.
