For instance, meat and less delicate fish do well over direct heat. Also, it's best to apply sauces a few minutes before you remove your food from the grill since marinates can burn easily because of any sugar content. And when it comes to cooking burgers, there's one big mistake so many of us make.
Sendik's meat manager, Brian Schroeder, says to never press down on a patty. This causes the juices to go out of the burger. Also before you make the burger, don't overwork it. Press it firmly enough to make a nice patty.
One more important piece of advice, give yourself options in terms of how high the burners are. You should be cooking with a range of heat, not all turned up to the highest setting. And finally, make sure you have a reliable meat thermometer.
