OAK CREEK, Wis. (CBS 58) -- Forget sausage making: how about watching cheese age?
You now have the chance at Alpinage Artisan Cheese in Oak Creek. It's open to the public two days a week, Fridays and Saturdays.
The shop is known for its Mount Raclette, a rich, buttery and nutty Alpine-style cheese. The owner says it needs to be aged for a few months in an open environment with controlled humidity. It also must be washed with a brine solution just about daily as it rests on wood boards.
You can see this aging process either on Friday or Saturday between the hours of 10 a.m. and 5 p.m.
