Celebrating national oatmeal day with a new twist on oatmeal cookies

MILWAUKEE (CBS 58) -- As November quickly approaches, what better day to celebrate a traditional warm meal? Thankfully, even on warmer days, oatmeal can be so much more than a warm, hearty dish.
Today, Tuesday, Oct. 29 is recognized as National Oatmeal Day. To celebrate, Carmen Baldwin, NDTR of Hunger Task Force joined us on Tuesday to share the recipe for a tasty and kid-friendly cookie recipe that uses lentils along with traditional rolled oats.
Ingredients
- 1½ cups flour
- 1 cup butter softened
- 1 cup brown sugar
- ½ cup granulated sugar
- ½ cup lentil puree (cook lentils and mash to a pureed consistency)
- 1 tsp cinnamon
- 3 cups rolled oats
- 1 tsp salt
- 1 cup chocolate chips
- 1 egg
Instructions
- Preheat oven to 350°
- Cream together butter and sugars. Add egg. Beat in vanilla. Mix in lentil puree.
- In a separate bowl combine flour, baking soda, cinnamon and salt. Gradually mix dry mixture into butter mixture.
- Once completely mixed, fold in oats and chocolate chips.
- Put 1 tablespoon cookie dough on greased cookie sheet, repeat with remaining dough. Bale for 10-12 minutes until slightly brown.
