Local chef shares tips for cooking a juicy turkey this Thanksgiving
WAUWATOSA, Wis. (CBS 58) -- If you want to impress your guests this Thanksgiving. Chef Michael Feker of Il Mito in Wauwatosa is sharing his top tips for preparing a juicy turkey this holiday.
"The first part is compound butter," said Chef Feker. "Butter infused with a little bit of mustard and a little lemon juice to go under the skin."
Chef Feker combines one stick of room temperature butter, paprika, sage, thyme, parsley and basil to create his compound butter.

Next, Chef Feker says the smaller the turkey, the easier it is to master.
"Make sure the turkey you're cooking is not too big," said Feker. "And tease the turkey with a little bit of liquid in the roasting pan before it goes in the oven. ... A little bit of white wine or chicken broth or whatever you wish."
